No Bake Cheesecake Bites

Ingredients
  

  • 1 ½ cups 150g graham cracker crumbs
  • 6 tablespoons 85g unsalted butter, melted
  • 16 oz 450g full fat cream cheese, softened
  • ½ cup 100g granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons 30ml fresh lemon juice
  • ½ cup 120ml heavy whipping cream
  • Optional topping: 1 cup 150g fresh berries

Method
 

  1. Combine graham cracker crumbs and melted butter in a bowl until the mixture resembles wet sand.
  2. Press 1 tablespoon (15g) of crust mixture firmly into the bottom of 24 mini muffin cups or silicone molds. Chill while preparing the filling.
  3. Beat softened cream cheese and sugar on medium speed until smooth and creamy, 2 to 3 minutes. Scrape bowl sides as needed.
  4. Add vanilla and lemon juice, mix until incorporated.
  5. In a separate bowl, whip heavy cream to stiff peaks. Gently fold into the cream cheese mixture until uniform.
  6. Spoon or pipe filling over crusts, filling each about three quarters full. Smooth tops.
  7. Chill for at least 3 hours or overnight. Top with berries before serving.

Notes

  • Do not use cold cream cheese, which leads to lumps.
  • Refrigerate in an airtight container up to 5 days, or freeze individually wrapped bites up to 1 month.
