Make the Levain
Mix starter, flour, and water. Cover and let ferment 4–6 hours until doubled and bubbly.
Autolyse
Combine flours and water. Mix until no dry flour remains. Cover and rest 45–60 minutes.
Mix the Dough
Add levain, salt, and honey. Knead/fold with wet hands for 6–10 minutes until smooth. Target dough temperature: 76–78°F (24–26°C).
Bulk Fermentation
Rest 30 minutes, then perform 5–6 stretch-and-folds every 30 minutes for the first 2.5 hours. Continue fermenting 5–7 hours total until dough has risen 60–80% and feels airy.
Pre-shape & Bench Rest
Fold into a loose round. Rest 25–35 minutes.
Final Shape
Shape into a boule or batard. Place seam-up in a floured banneton.
Final Proof
Proof 1–2 hours at room temperature or 8–16 hours in the refrigerator.
Bake
Preheat oven and Dutch oven to 450°F (232°C). Score loaf. Bake covered 20 minutes, then uncovered at 425°F (218°C) for 22–28 minutes until internal temperature reaches 205–210°F (96–99°C).
Add Garlic Butter
Mix roasted garlic with butter, herbs, cheese, and seasonings. Spread on loaf 5 minutes before baking ends. Return to oven to finish browning.
Cool
Cool completely on a wire rack for at least 2 hours before slicing.
