Quick Sheer Khurma Recipe

Ingredients
  

  • Thin Vermicelli Seviyan: 1 cup (broken into 1-2 inch pieces) / 100g
  • Ghee Clarified Butter: 2 tablespoons / 30ml
  • Whole Milk: 4 cups / 950ml
  • Sweetened Condensed Milk: ½ cup / 150ml
  • Evaporated Milk optional: ¼ cup / 60ml
  • Mixed Nuts almonds, pistachios, cashews – chopped: ⅓ cup / 40g
  • Chopped Dates or Golden Raisins: ¼ cup / 40g
  • Ground Cardamom: ½ teaspoon / 2.5ml
  • Saffron Strands optional: A small pinch (soaked in 1 tbsp warm milk)
  • Sugar: 2-3 tablespoons adjust to taste / 25-40g
  • Rose Water or Kewra Essence optional: 1 tablespoon / 15ml

Method
 

  1. Roast the Nuts & Vermicelli
  2. Heat ghee in a heavy-bottomed pan over medium heat. Add chopped nuts and stir for 1-2 minutes until lightly golden. Remove and set aside.
  3. In the same pan, add broken vermicelli. Stir continuously for 2-3 minutes until it turns a light golden color. Do not burn.
  4. Add Milk & Sweeteners
  5. Pour in the whole milk and bring to a gentle simmer. Stir in condensed milk (and evaporated milk if using) until fully dissolved.
  6. Add ground cardamom and sugar. Simmer on medium-low heat for 5-7 minutes, stirring frequently, until the vermicelli softens and the mixture thickens slightly.
  7. Finish the Dish
  8. Fold in the toasted nuts and chopped dates/raisins. Cook for another 2 minutes.
  9. Remove from heat and stir in rose water (if using). Let it rest for 2-3 minutes before serving.

Notes

  • This is a sheer khurma without khoya version that uses condensed milk for quick creaminess.
  • For a richer version, use full-fat milk and add evaporated milk.
  • Adjust sweetness according to your preference — condensed milk already adds significant sweetness.
  • Perfect as a quick eid sweet for guests, vermicelli kheer with condensed milk, or easy seviyan for eid morning.
