No-Bake Style Semolina Pudding (Halwa)

Ingredients
  

  • ½ cup 90g fine semolina
  • 2 cups 480ml whole milk
  • ½ cup 120ml sweetened condensed milk
  • ¼ cup 50g sugar, adjust to taste
  • 2 tbsp 28g unsalted butter or ghee
  • ½ tsp 1g ground cardamom
  • ¼ cup 30g slivered almonds and raisins
  • Rose petals or pistachios for garnish

Method
 

  1. Lightly toast semolina over low heat for 2-3 minutes until fragrant (optional, for deeper flavor).
  2. Add butter or ghee and stir until melted. Pour in milk and condensed milk gradually while whisking to avoid lumps.
  3. Add sugar and cardamom. Cook on medium-low, stirring frequently, for 8-10 minutes until thickened like soft pudding.
  4. Stir in nuts and raisins. Remove from heat.
  5. Spoon into molds or a dish. Chill for 1-2 hours.

Notes

Keeps refrigerated for 4 days. Reheat gently with a splash of milk, or serve cold.
