No-Bake Date and Nut Energy Balls

Ingredients
  

  • 2 cups 300g Medjool dates, pitted
  • cups 180g mixed nuts (almonds, pistachios, walnuts), chopped
  • ½ cup 50g desiccated coconut, for rolling
  • 1 tsp 5ml rosewater
  • ½ tsp 1g ground cardamom
  • Pinch of saffron strands soaked in 1 tbsp (15ml) warm milk (optional)

Method
 

  1. Soak dates in warm water for 10 minutes if firm, then drain and chop roughly.
  2. In a food processor, pulse dates until a sticky paste forms. Add nuts, rosewater, cardamom, and saffron milk. Pulse until the mixture holds together when pressed.
  3. Scoop 1 tablespoon (15g) portions and roll into balls using slightly damp hands.
  4. Roll in coconut or crushed nuts if desired.
  5. Chill on a parchment-lined tray for 30 minutes to firm up.

Notes

Store airtight in the fridge for up to 2 weeks, or freeze for 1 month. Thaw at room temperature for 10 minutes before serving.
