Minimalist Bento Cake

Ingredients
  

  • For the Vanilla Cake:
  • 1 cup all-purpose flour 120g
  • 1/2 cup granulated sugar 100g
  • 1 tsp baking powder 4g
  • 1/4 tsp salt 1.5g
  • 2 large eggs room temperature (100g)
  • 1/4 cup unsalted butter melted and cooled (57g)
  • 1/4 cup whole milk 60ml
  • 1 tsp vanilla extract 5ml
  • For the Frosting:
  • 1 cup heavy whipping cream cold (240ml)
  • 2 tbsp powdered sugar 15g
  • 1/2 tsp vanilla extract 2.5ml
  • Optional: a few drops of gel food coloring for a soft pastel tone
  • For Assembly:
  • 1 small bento cake box 4-inch
  • Optional toppings: fresh fruit slice small ribbon, edible flower

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 4-inch round cake pan (or two smaller pans for layers).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, whisk eggs and sugar until pale and slightly thickened, about 2 minutes.
  4. Add melted butter, milk, and vanilla extract to the egg mixture. Whisk to combine.
  5. Fold the dry ingredients into the wet mixture gently, just until no streaks of flour remain. Do not overmix.
  6. Pour batter into the prepared pan. Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. While the cake cools, whip the cream, powdered sugar, and vanilla extract to stiff peaks for the frosting.
  9. Once the cake is fully cool, slice horizontally if making two layers. Spread a thin layer of frosting between layers if applicable.
  10. Apply a thin, smooth coat of frosting on top and sides, keeping it minimal and even for the signature bento look.
  11. Place the finished cake into the bento box. Add a small topping like a single fruit slice if desired.
  12. Chill for at least 15 minutes before serving to set the frosting.

Notes

  • For a smaller portion, halve the recipe and bake in a 3-inch pan.
  • Keep decorations minimal — one or two small touches is enough for the Korean minimalist aesthetic.
  • Store in the refrigerator, covered, for up to 2 days.
