Classic Peanut Butter Oat Energy Bites

Ingredients
  

  • 1 cup 260g natural peanut butter (or sunflower seed butter for nut-free)
  • cup 113g honey or maple syrup
  • 1 teaspoon 5ml vanilla extract
  • cups 135g rolled oats
  • ¼ cup 40g ground flaxseed
  • ½ cup 85g mini chocolate chips
  • Pinch of sea salt

Method
 

  1. In a large mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth.
  2. Add rolled oats, ground flaxseed, and salt. Mix thoroughly until evenly combined.
  3. Fold in mini chocolate chips.
  4. Cover and chill the mixture for 15-20 minutes to firm slightly.
  5. Scoop 1-tablespoon portions and roll into balls.
  6. Place on a parchment-lined tray and chill for an additional 15 minutes.

Notes

  • For nut-free version, substitute sunflower seed butter for peanut butter.
  • Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
  • Add an ice pack in lunchboxes on warmer days to maintain shape.
